The saying is true.  The best things in life are free.  Friendship and love are two things that are incredible!  And both must be freely given.  If they aren’t, then it isn’t friendship and love.  For me,  baking is a way to show my love to my friends.  I love baking.  It could be my love of carbs and sugar but I love to bake.  I don’t understand when someone says they don’t like sweets.  DOES NOT COMPUTE!  How can someone not like sweets?  But I don’t like mushrooms or black olives, maybe it is the same kind of thing.

Last week I posted a couple of baking recipes, one for M&M Cookies and one for Sweet Potato Bread.  You can check out last week’s post for reviews on both!  During this past week, a customer dropped off a crate of raspberries and blackberries at my husband’s workplace.  So he brought some home and asked, “can you do anything with these?”  My first thought was my favorite Berry Cakes with Cinnamon Whipped Cream.  However I didn’t feel like whipping cream and I wanted to try something new. (Though these cakes are marvelous and super easy to prepare.)

So I did what anyone would do, I searched Pinterest.  I love being able to see pictures of the recipes first.  After filtering through a few different posts I came across this one for Mixed Berry Clafoutis. (I think you say it like clay-foo-tee, I don’t really know.)  This recipe looked easy enough, it came from an amazing blogger who created both the M&M Cookie recipe and the Sweet Potato Bread, and I had everything on hand.  Let me tell you—these are AMAZING!!!  Such a fancy name for such an easy dessert!  I think I used too many berries in mine, I know I used over the two cups that was called for in the recipe.  And they could have been cut in half.  It doesn’t really matter.  They are delectable and delicious served both warm as intended and completely cold straight from the fridge.  TRY THEM TODAY!!!!!

DINNER: new recipe alert!!!  We are going to try Pizza Arrabbiata from this month’s Cooking Light Magazine.  Spicy pizza with pancetta sounds like a win to me!  I will serve a mixed green salad with balsamic vinaigrette alongside.

DINNER: My husband has a class on this day so we it will be a little bit of a mix and match meal.  Everyone will get an artichoke for dinner.  I have a huge pot that I am able to steam 3-4 artichokes in.  I love it.  I serve artichokes with my everything sauce (recipe to follow).  To go along with the artichokes I will have Banging Shrimp, I will make my husband a burger slider, and my son will get a corn dog.  Favorites all around!

EVERYTHING SAUCE (I can eat this with almost everything!)

Equal parts sour cream and mayonnaise, blended chipotles in adobo to taste, a pinch of salt and a splash of lime juice.  Stir together until combined.  It can be eaten immediately but is better over time.

SMOOTHIE: Banana Fudge Smoothie with a touch of peanut butter

DINNER:  My husband had a meat guy come by his work last week.  This is the third time this salesman has stopped by.  The first time we were a bit skeptical but we still purchased some salami and summer sausage.

OMG!!!  This meat is amazing!!  The second time the guy stopped by we just got summer sausage.  We were still working on the salami chunk.  My son LOVES the summer sausage.  So this time we grabbed two summer sausages since we go through it so fast.  We just finished the salami but opted not to get that.  However, when my husband came home form work, I saw that he got hot links.  The thing is, this salesman is like a wholesaler.  You don’t just get a few links.  You get about 20.

So for this night, I will boil then grill the hot links and serve them with grilled onions on a nice roll.  To offset the heat a bit, I will serve the Cucumber Salad with the links.

DINNER: A grilling favorite that I haven’t made in FOREVER!!!!  Grilled Chicken Kabobs.  But these aren’t normal chicken kabobs.  Oh no!!!  They are bacon smothered chicken kabobs.  You put the bacon in a food processor then cover the chicken with the yummy bacon bits.  This ensures nice juicy chicken and crispy bacon in nearly every bite!!  For the veggies I just have them sit in a little bit of olive oil, salt and pepper.

With all the baking I have done in the last week or so I don’t know if I will be trying anything new this upcoming week.  It’s been awhile since I experimented with a savory crusty bread but I don’t see one working out with the dinners I have planned.  I know I don’t need anymore cookies or sweets for awhile.  Who knows?  I am sure something will pop up that I just HAVE to make!

The first day of spring snuck in on us between St. Patrick’s Day and Easter.  However, now that we are in April it feels more like spring.  The weather is warmer, a little sunnier, the outlook brighter.  However, this is my least favorite time of the year.  All you fellow allergy sufferers can sympathize with me.  As I was driving through the neighborhood today, I saw a yellow cloud being blown down the street.  Pollen is not my friend.  I think it’s about time to up the medication dosage.

And a quick non-food related note: I opened an Etsy shop!  delivEARingMemories  I LOVE LOVE LOVE Disney and Disneyland.  Obviously, I threw my son a Disneyland themed birthday party.  I originally set up the shop to sell my pictures of Disneyland since there is a market for them.  And I am getting there.  There are edits and groupings and having to find a print lab.  So in the meantime I have made jewelry from vintage Disneyland tickets.  And they are simply gorgeous!  Check out the shop and let me know what you think.

This past week I made my favorite Coconut Banana Bread.  It has been three months since I have even tasted its deliciousness, let alone made a batch.  I usually make mini-loaves so I can freeze them and not overindulge in this super moist, delectable bread.  And it smells heavenly while baking.  Definitely my favorite bread.

This morning I came across this bread recipe for a Sweet Potato Bread.  It took everything I had not to run to the kitchen and make this bread.  The only that stopped me was that I had some coconut banana bread lying in wait to be eaten.  So I do have plans to make this bread in the upcoming week.  As soon as I eat the rest of my banana loaf.  ***This is a really good recipe.  I am not used to spiced bread since I am not a carrot cake fan.  I made four mini loaves so I could share the bread and not eat every last crumb. I had overcooked the sweet potato some so I had to through out some chunks that wouldn’t mash.  And I initially though that I had overcooked the loaves as they appeared really dark brown but they are so moist, soft and tasty.  I will be making this bread again.

One of my besties in coming in to town at the end of the week.  I plan on making coconut macaroons for her.  I recently found out they are one of her favorite types of cookies.  Goes to show you can always learn something new about your friends.  However this is a secret recipe that I cannot share with you.  However, this friend of mine also let me know about coconut M&Ms.  I hadn’t really ever paid attention to them despite being a coconut lover.  So I bought a bag.  They have stayed closed in my pantry.  I have been saving them.  Saving them for these M&M Cookies.  I made these cookies with regular M&Ms and they are INCREDIBLE!!!.  Definitely a recipe that deserves the title “THE BEST.”  Give them a try, you won’t be sorry.  And, so you don’t eat the entire batch in one sitting, you can freeze the dough and pull out a couple at a time.  It’s perfect! ***Using coconut M&Ms was a delicious choice!  But you must like coconut.  I have a friend who kind of likes it and she wasn’t fond of the coconut flavor.  I promised her that for her birthday I would use peanut butter M&Ms with this recipe.  I am not sure I can wait until October though.

FRIDAY

SMOOTHIE: Pineapple Mango Green Smoothie–for this smoothie I make a few changes.  Instead of measuring individual fruits, I just use 2 cups of frozen mixed tropical fruits and add a dash of coconut extract.  Now if I could just magically transport myself to Hawaii!  I drink this so fast every time!!

DINNER: We have a roll over recipe form last week.  I had more leftovers than anticipated so from last week we are making the Pork and Ginger Wonton Stir Fry.  I will still serve this as planned with Cucumber Salad.  The coolness of the salad should balance the heat of the stir fry.White-writing-29491444-516-350

SATURDAY

SMOOTHIE: Pumpkin spice Green Smoothie.  A can of puree lasts for about three smoothies so this will be it for a few weeks.

DINNER:  new recipe alert!!!!  This came from my Cooking Light Magazine: Pan-Grilled Chicken with Chorizo Confetti.  (I will probably grill my chicken outside if it isn’t raining.  I love cooking on a real grill!)  A reviewer of the recipe served hers with black beans which sounds delicious.  Or maybe a side salad with a salsa-vinaigrette.  I will also be making a Jalapeño-Cheddar Crusty Bread.  It’s my personal favorite.  I need to try a few new savory recipes like bacon-cheddar, but sometimes you have to stick with what you know.  ***While I did make the crusty bread, my dinners got moved around and I never did get to try this chicken recipe.  Maybe in the next week or two.

SMOOTHIE:  My favorite Banana Fudge Green Smoothie!  Look for the recipe on my prior post Monster Mash.

DNINNER:  Since my friend from Boston is in town visiting her folks and we will be having a BBQ!!  So what goes best with BBQ??  Why cole slaw of course.  Never buy store-made cole slaw again!  This recipe is super simple, you make it a day in advance and tastes amazing!!!

DINNER: new recipe alert!!!  Chicken Pillows!  These look a lot like my favorite Chicken Crescent Roll Casserole but with slightly less sauce and cheese and a little more crunch.  I can’t wait to try them.  I will serve it with these green bean fries (another new recipe).

DINNER:  One of my personal favorite recipes, Buffalo Chicken Potato Skins!  I am undecided as of right now if I will be making the crockpot buffalo chicken that is the base for this recipe, or just cook some chicken and add buffalo sauce, either way these skins are scrumptious!!

Where did March go???  In like a lion and out like a lamb.  It seems like I just wrote those words but no…..it has been four weeks already.  Not only that but Easter is already upon us!  I always get thrown off schedule when Easter falls this early in the year.  Maybe it is because kids have a week off school and I am not ready.  My son would actually prefer to be going to school next week. I am sure by the end of break he will prefer staying home.  Either way I need to get on the ball and plan some activities to keep us busy and happy.

One way to be happy is chocolate chip waffles.  Pretty much just like chocolate chip pancakes but using a waffle maker.  I prefer it too.  When I make pancakes I need to pull out the griddle and it is huge.  A waffle maker is tiny.  The prep is the same. And they turn out so good!!  I make a half batch and save any extras to toast up later in the toaster oven.  I have only recently started making these batters from scratch and that is for a very good reason.  This batter mix is AMAZING!!!  Golden malted flour can be found at select Williams-Sonoma and online.  It is worth every penny.

I made these based on the Six-Sisters recipe for Funfetti Cake Batter Blondies.  I used the Spring Funfetti cake mix by Pillsbury and the matching spring canned frosting.  These are irresistible!!  It is taking everything I have right now not to go eat more!

DINNER:  We are hitting the road for my grandparents house for Easter Dinner.  My husband and I have hatched a plan to take them to dinner.  They have a Skipolini’s pizzeria which I think had THE BEST pizza.  Some places have good dough, some have good sauce, some have good cheese.  This place is three for three.  Even a plain pepperoni pizza is incredible.  If you have a chance to try one, DO IT!!!  The preggo pizza is my personal favorite and no you don’t have to be pregnant to eat it.  It is loaded with garlic and onions so make sure your significant other has some too.

DINNER:  We do our family Easter dinner on this night.  I will do my long run today instead of Sunday to allow for the extra calories.  My grandmother likes to host it, so it will be a night off for me! (Though I am sure I will be helping in the kitchen, I haven’t had to prepare a menu.)  I know we are having ham, raviolis, hawaiian sweet rolls, baked sweet potatoes, green beans with onion and bacon and Portuguese sweet bread.  Earlier in the day I plan on grabbing some fried pickles from Lucille’s in Rocklin.  Seriously THE BEST fried pickles from a restaurant EVER!!!  However, I came across a recipe in the last day or so that I feel I MUST make!  An Easter gathering is the perfect time to try a new dip and not eat the entire thing myself!!!  This French Onion Dip claims to be the BEST EVER.  (lots of bests in this week’s post.)   I happen to have a bag of original pop chips in my cupboard and just need to pick up some veggies.

SMOOTHIE: Pumpkin Monster Smoothie

DINNER: Since we will already have had our Easter dinner, and I won’t be doing my long run today, we are going with a lower calorie dinner.  This is a new recipe for my family but it comes recommended by my sister: Cheeseburger Casserole by Skinnytaste.  Only 260 calories in a decent sized serving.  Can’t wait to try it! ***This recipe was super tasty.  It reheated well as leftovers and I froze individual servings for quick lunches.

DINNER:  Another new recipe.  This one I chose because of its easiness factor and the good looking picture on the post.  It’s from Mix & Match Mama who happens to be the sister of the latest Bachelor Sean!  Small world…anyhow, back to dinner: Chipotle Chicken Tostadas.  And to make this dinner even easier, it uses your crockpot!  Then you can use the leftover chicken to make taquitos, salads, quesadillas.  Which brings me to my next topic. Last week we had a poblano mac ‘n cheese on the menu.  It called for Quesadilla Queso.  I went to several stores to find it and finally bought it at Raley’s/Nob Hill.  This cheese is AMAZING.  It is smooth and more buttery than jack.  Glad I took the time to find it! ***These tostadas were AMAZING!!  I will definitely be making them again.

So since I am making the French Onion Dip and I am making the stir fry— I will use leftover ingredients from both recipes to make these French Onion Soup Potstickers!  There is a good chance these will be made Sunday for lunch, with any extras frozen for later use.  Another possible lunch option for this upcoming week are these Shrimp Tacos.  The husband doesn’t like shrimp all too much so I will test them out on myself for lunch.  They look scrumptious.

This isn’t actually a basketball post.  I have never been part of a March Madness pool nor have I ever really followed college basketball.  However, my alma mater is in the madness……  GO GAELS!!!

I had some bananas browning on the counter and wanted to try a new recipe.  I usually want coconut banana bread because it is THE BEST.  However, I knew I had some buttermilk to use sitting in the fridge and after searching through many recipes I tried one claiming to be The Best.  It was also the only one where I had every ingredient on hand and didn’t have to go to the store.  This turned out really tasty.  Definitely an excellent plain banana bread recipe.

The queso is healthy coming in at 15 calories for two tablespoons.  I have yet to try any of the ice creams.  The latkes are a staple in my freezer until I can get a supply from a family friend.  (Is it weird that my brain doesn’t process potatoes as a vegetable??)  The PB&J bar was AWESOME!!  If you like PB&Js then go for it.  It has a perfect blend of peanut butter and jam wrapped in chocolate.  And then there is this:

I recently came upon the delightful company Biscoff on a recent trip to San Francisco.  The cookie had this taste that reminded me of my childhood.  Then a friend posted this as a cheaper version of Biscoff spread.  OH MY WORD!!!!!  This stuff is AMAZING!!!!  It now resides in the back of my pantry so I don’t eat the entire jar in one week!  So deep was my obsession that I spent a day on Pinterest pinning any sweet treat ideas involving Biscoff or cookie butter.  I may even go back through all my sweet boards and make one big Biscoff/Cookie butter board.  I am in trouble.

DINNER: Burgers based on the Popper Slider recipe.  These are a favorite of mine but this time I will make them slightly more healthier.  I plan to use extra lean ground turkey and light cream cheese.  I may even lettuce wrap the burger depending on how the rest of my day goes.  I will serve alongside the burgers some Baked Zucchini Sticks.

DINNER: new recipe time: Grilled Chicken Bruschetta  I know I have made a version of this before however I can always try another one!  Of course the best thing to serve alongside is the ever popular Crusty Bread.  I will make it plain this time that way I can either make garlic bread, or make a chicken bruschetta sandwich, or some type of herbed butter.  Oh the possibilities!

So for ‘special treats’ this week I have cheater cookies in the fridge I need to bake.  Just open the package and bake.  It doesn’t get any easier.  My son likes to eat them with frosting so I may turn to my new favorite buttercream recipe and make some fresh for him.  And instead of doing a sweet crunchy bread recipe, later in the week I will try out Cake Batter Blondies.  I have a habit that when a new holiday rolls around, I immediately head to the specialty aisle at Target and by the corresponding funfetti cake mix and frosting.  Yes I know I can make it from scratch and that it would probably taste better; but it is like I am on autopilot.  So instead of making a cake, or cupcakes, I’d thought I would give these blondies a try.   ***Do not make these is you have no will power.  This was one of the EASIEST and most delicious baked good I have had in a long time!!!  The recipe link gives you a recipe for your own frosting, I just used the store made frosting.  Both cake mix and frosting were by Pillsbury this time.

It’s St. Patrick’s Day Weekend!!!!  The sun is shining!!  It’s actually very warm here in California, reminding all of us why we pay so much to live here.  It has been so nice to drive around with the sunroof open, blasting my music (when I am alone in the car) and soaking in some much needed vitamin D.  I have a feeling we are in for one more cold snap though.  Just a gut feeling.  Or maybe I just don’t want to do the yard work.  As much as I want a nice garden, the reality is we have some kind of underground varmint currently ruining our grass.  The last thing I want to do is plant vegetables for someone else to enjoy.

So if you are a regular reader or follower on social media, you know my love for crusty bread.  I call it one of the easiest breads you will ever make.  However, there is one easier.  And it is delicious.  And it freezes well.  And EVERYONE has had the store bought version of it at some point in their life.  English Muffin Bread.  This really and truly is the easiest bread you will ever make.  And I am due to make some.  I eat a slice of this bread toasted nearly every morning with my poached egg.  I also have had it with honey, apple butter and homemade preserves.  It tastes so close to an english muffin and the price can’t be beat.  You just need a large family or some freezer space because this make 4 large loaves.  I split each large loaf into fourths and wrap and freeze them.  Since it is only me in the house that eats it, a fourth of a loaf lasts me a week.  That means an entire recipe can last me up to 16 weeks.  That’s about 13 packages of english muffins for the price of a small bag of flour and some yeast.  Get baking!!!

And one more piece of good news, we got a new grill!!! I love to grill and our older cheap one got really rusted last year.  If I wanted to grill I had to cover the grates in foil.  It was terrible.  Needless to say, I am super excited!!  So we have two grilling recipes this week.  One I have made before and the other I have made a stove version of the recipe.  Plus with the weather being so nice…it’s screaming with “Cook outdoors!!!  Enjoy the sunshine!!!”  So onto next weeks menu!

SMOOTHIE: Blueberry Banana Green Smoothie

DINNER: Pizza Stuffed Chicken Breasts and a salad.  These are pretty tasty and healthy, so a win-win!

SWEET-TREAT: These M&M Cookies came through my email today and I must try them!!  The best part is that I can freeze the dough balls and pop one or two out of the freezer at a time….for my son of course!  hahahahaha ***These cookies were amazing!! They were so puffy and chewy and full of M&Ms.  And in reading this recipe, i linked up to her Maraschino White Chocolate Chip cookies which were equally as amazing!  Go bake some up right now!!!!!

SATURDAY

SMOOTHIE: Cinnamon Apple Green Smoothie

BREAKFAST: I just got emailed these amazing looking Buttermilk Strawberry Sprinkled Pancakes!!  I am thinking about trying them out if my son is up for a new recipe.  My husband has a saying, “bread isn’t breakfast.”  His loss.  ***These were tasty and delicious.  The picture shows them without strawberries mixed in, he preferred them on the side.  I did make them with strawberries mixed and and they were so tasty.  I highly recommend these pancakes!!!!

DINNER:  Grilled Chicken Fajita Kabobs.  These are very tasty.  You can serve them with all the traditional fajita fixings if you like;  beans, rice, tortillas, sour cream, guacamole and salsa.  I love grilling kabobs.

SUNDAY–ST. PATRICK’S DAY!!

SMOOTHIE: My famous fudge smoothie!

DINNER: Reuben Hash.  This is SO good.  Ever since Rachael Ray put it on her show, I have made it for St. Patrick’s Day.  I probably should make it more than once a year since my husband does love it so much.  But I forget, until this day rolls around again.

APPETIZER/SNACK/LUNCH: Guacamole Deviled Eggs Cant get enough green on St. Patrick’s Day and these look tasty! 9Never end up making these.  Had beer battered french fries with a horseradish dipping sauce at the town’s St. Patrick’s Day festivities.)

SPECIAL TREAT: Pistachio St. Patrick’s Day Bread.  This looks really tasty and it’s green!  I will probably leave the nuts out since my son won’t go near it with nuts.  Or maybe I will pour batter for one loaf, then mix in some nuts for the second loaf.  There’s an idea!!  ***This was pretty tasty.  I didn’t add any extra nuts into the batter, more of a personal preference than anything else.

MONDAY

SMOOTHIE: Coconut Banana Green Smoothie

DINNER: Another grilling day!!  So for my husband I will grill a small steak and serve it with onions and mushrooms on top similar to Texas Roadhouse.   In in the spirit of Texas Roadhouse, I am going to try my hand at some dinner rolls that are supposed be like those found at the restaurant.  For me I am going to try Grilled Bangin’ Shrimp.  The regular bangin’ shrimp is so tasty I can’t wait to try this one!!!  And for both of us I am going to try a new recipe for BBQ Rosemary Sweet Potatoes.  I love sweet potatoes pretty much just as they are.  Throw a little spice on them and I am in heaven.

TUESDAY

SMOOTHIE: none today, lately this has been tea Tuesday where I meet a friend for morning tea at any one of the neighborhood Starbucks.

DINNER: Crockpot Sweet & Sour Pork with Spicy Sriracha Roasted Broccoli.  This pork is a new recipe and sounds delicious.  The broccoli has quickly become a favorite of ours.  i will also serve this with rice for my husband and possible some quinoa for myself.  I will make extra quinoa them pull from it to make lunch from any of these yummy recipes on my pinterest board!

SMOOTHIE: none today, this has always been my day to indulge in a Skinny Caramel Macchiato.  You might even see me sitting in a local Starbucks working on this very blog while handing out some bread to my favorite baristas.  🙂

As you may have noticed over the last few weeks, I tend to plan leftovers on Wednesdays and Thursdays.  This leaves me flexibility through the week.  Sometimes a dinner doesn’t get made.  That happened last week when my son came home with a great report card and we went out to dinner instead.  Sometimes I may have the leftovers on a Monday and then cook a dinner on Thursday.  However, since I do my grocery shopping early Friday mornings, I tend to cook the food when it is freshest leaving the end of my week for whatever is left.  However a more fun note….I will be trying a new flavor of crusty bread…. Apple Spice!!!  Stay tuned for a review!  ***This bread was amazing!!!  Very comparable to the pumpkin spice one I made recently.  I used apple butter, apple pie spice and dehydrated apples.  Top is with some cinnamon butter!!!  Definitely one of my favorite flavors!White-writing-29491444-516-350
